Black walnut · Lyle Hembree · Stockton, Missouri

One board for what’s raw. One for everything else.

Two walnut boards, shaped from the shadows of a husband and wife standing at their kitchen window. The tall one takes raw meat, poultry and fish. The short one takes bread, fruit, vegetables and cheese, and goes to the table. Stood together, the short one leans into the tall one. Carved in pairs by Lyle Hembree, 68, and never sold apart.

Darlene’s cafeteria rule

His for what’s raw. Hers for the rest.

No labels, no colors to remember. The shape tells you which board is which.

Hers The Short Board Ready to eat

Bread, tomatoes, fruit, herbs, cheese. Everything you eat as it is. This is the one that goes to the table.

11.8 × 7.9 in
His The Tall Board Raw only

Raw chicken, pork chops, steak, fish fillets. Everything that still has to be cooked. It never touches the bread.

15 × 7.9 in

The USDA gives home cooks the same advice: one cutting board for fresh produce and bread, a separate one for raw meat, poultry and seafood.

Why two boards

What one board is doing to your kitchen

I
The problemChicken juice in the saladRaw meat juice runs into every knife mark. You wipe the board, and most of it comes out. Most is not all, and the tomatoes go on next.
The pairRaw goes on the tall one, onlyMeat, poultry and fish stay on his board. Bread, fruit and salad never touch it. One look at the shape and you know.
II
The problemPlastic in your foodA 2023 North Dakota State study estimated a single plastic board can shed up to 79 million microplastic particles a year into what you cut.
The pairSolid black walnutNothing plastic under your knife. Every board gives up a little of itself under a blade. Walnut gives up walnut.
III
The problemThe board that never really gets cleanThick boards don’t fit in the sink, so they get a quick wipe on the counter and go back in the drawer.
The pairThin enough to scrub both sidesAt 0.4 inches they lie flat in the sink, get scrubbed front and back, dry standing up and hang on the wall instead of a damp drawer.
Two shadows on brown paper

A marriage, traced at the kitchen window

For their fortieth anniversary in 2019, Lyle stood his wife Darlene next to him at the kitchen window. She leaned her head on his shoulder, the way she had for forty years, and he traced their two shadows on brown paper. The walnut came from a tree that fell on her father’s farm in the ice storm of 2007.

Darlene ran a school cafeteria for thirty-one years, and she set the rules the same night. Raw meat on his. Everything else on hers. She hung them by the stove, and every pair Lyle has carved since follows the same two shadows and the same rule.

“She was five-foot-one and I’m six-two. Her head fit right here. I didn’t invent that shape. I just traced it.”Lyle Hembree · Stockton, Missouri
Kitchen rule · D. Hembree

The tall one is Lyle’s. Chicken, pork chops, catfish.

Mine is for bread, fruit & cheese, and mine goes to the table.

Raw meat NEVER on my board. That means you, Lyle.

Things you can check yourself

Small details, made the slow way

1
Black walnut, Missouri countryDark chocolate heartwood with lighter streaks running through it. Hard enough for everyday use and softer than maple, so it is easy on a knife edge.
2
Light in the handAt 0.4 inches thin, either board goes to the table in one hand and lies flat in the sink for a proper scrub.
3
Folk art on the wallBetween meals they hang side by side by their handle rings, the short one leaning in. People see a couple before they see a cutting board.
4
No two pairs alikeThe shapes stay the same, the walnut decides the rest. Grain, streaks and the shade of brown change from pair to pair.

“I’ll be straight with you. These aren’t a butcher block for carving a whole turkey. They’re for every day: the chicken on mine, the bread on hers, and both back on the wall when the dishes are done.”

The Last 312 Pairs

A note from Lyle’s pole barn:

Lyle Hembree spent 41 years grading black walnut at a sawmill near El Dorado Springs, Missouri. In 2019, for their 40th anniversary, he traced the shadows of himself and his wife Darlene on butcher paper, her head on his shoulder, and cut the first pair from a walnut that came down in the 2007 ice storm. Darlene had one rule from 31 years in a school cafeteria: raw only on his board. Darlene passed in January 2025. These are the last 312 pairs from that walnut. A buyer from Kansas City offered him $24 a pair to resell them for $189. Lyle said no and is selling them himself, always as a pair, never one without the other.

What people say about Lyle’s walnut boards

Customer pointing at the walnut grain near the handle

I was sure these would turn out to be veneer or glued strips like the ones at the big box stores. They are not. You can follow the grain from the handle all the way down, one solid piece of walnut, and you can feel where somebody sanded it by hand. Prettiest thing in my kitchen right now.

Customer selfie holding both walnut boards in her kitchen

Took this picture for my sister because she didn't believe me. They really do fit together like in the photos, the little one tucks right into the big one. Thinner and lighter than I expected but not flimsy at all, no wobble when I chop. Color is exactly what you see online.

Both walnut boards on a family dinner table with cheese and bread

During the week the big one is for raw chicken and the small one for everything else, and it works. When we have people over I scrub them both and set them out side by side, and somebody always asks where I got them. Hand wash, a little oil once a month, and they still look new.

Customer holding the nested walnut board pair

I did cabinet work for thirty some years, so I checked these over pretty hard before I let my wife have them. Flat, no glue lines, edges eased nice and even, and the handle holes are sanded smooth inside where most people skip it. Whoever made these knows what he's doing. Worth every dollar.

Girl carrying the small walnut board with snacks

Our granddaughter calls the little one her snack board and carries it to the table all by herself, it's light enough for her. Meanwhile my son in law does the burger patties on the big one over on the island. Nobody has to wonder which board had raw meat on it anymore. Simple, but it made a real difference in our house.

How is it made?

Each pair is cut from solid black walnut, no laminate, no veneer, no glue lines. Lyle traces the two shapes from the original 2019 pattern, cuts them on the bandsaw, shapes the edges and handle rings by hand, sands them smooth and finishes them with food-safe oil. The tall board is for anything raw, the short board for everything else. Hand wash, dry standing up, and a little oil once a month.
